Shepherd's pie

No shepherds here, but hearty meat and potatoes, filling for the tummy! This is a basic recipe, feel free to enhance flavours and texture by adding vegetables if you like.

Minced beef, 1 pound
Onion, chopped fine
Garlic, 3 cloves, chopped
Seasoning peppers, 3 chopped
Potatoes, 5- 6 medium
Olive oil, one-third cup
Fine-leaf thyme, sprig
Egg, one
Parmesan cheese, 2-3 tablespoons to sprinkle
Salt, half teaspoon

Boil potatoes, cool, peel and squash.
While the potatoes are boiling, cook the meat. Heat 3-4 tablespoons olive oil, add onion, garlic, peppers and saute. When the seasonings are soft, add minced meat with salt and cook - stirring often -  at medium to high heat. Add thyme and a piece of hot pepper (optional).
Mix remaining olive oil into mashed potatoes, mix in meat. Beat the egg and spread over the top. Sprinkle with parmesan. Bake at 375 degrees for 40 minutes. Serve hefty chunks with some green salad on the side.
