Blueberry cheesecake

Oh no, another cheese cake! This one is very simple, not very sweet and you can substitute any fresh or frozen berries.

Digestive biscuits, 12-15
Butter 2-3 tablespoons , melted
Brown sugar, 2 tablespoons

Crush the digestives finely, mix with sugar and butter and press into the bottom of a 10 inch springform pan. Bake at 350 for 10 minutes. Remove from oven and cool.

Cream cheese, 16 ounces
Brown sugar, 2/3 cup
Eggs, four
Lime juice, tablespoon
Blueberries, a cup and a half, enough to cover the bottom of the dish

Put blueberries over the crust. Beat cream cheese, sugar, eggs and squeeze of lime until well-blended. Pour over blueberries. Put in 350 oven for about 40-50 minutes or until the cake wobbles only slightly in the middle. Cool in the pan. Eat at room temperature.

  2. gosh !!!....your desserts look really delicious....but who eats all these cakes at home????It's great,..one can put,...strawberries, raspberries, raisins... I could even smell the perfume...
