Lime Juice

When you have limes, make juice! This lime juice is made from three large seedless limes. Make a simple syrup first by dissolving a packed cup of brown  sugar in a cup of hot water. Allow it to cool. Squeeze limes and add ten to 15 splashes of Angostura bitters. Mix lime juice with syrup and add water to bring it up to one litre. Serve over ice.

Here in Italy, now we get alot of limes,and in fact I have been making a type of caipirinha, I just peel the limes and put the peel in alchol for a few days, their scent and essence goes into the alchol, it's a lovely perfume. Then I cut the peeled limes cut into quarters and squeeze them in a sturdy glass, then add a spoon of the essence and brown sugar, and a dash of angostura and loads of ice.
    Drink with a straw you get the pulp and the grainy sugar while you're drinking. It's a great cooler for summer.
