September for Salads

We  had wonderful salads in London and Amsterdam. Start with some spinach, a few arugula leaves, then flavour with olives, cheese, mushrooms; and a tangy balsmic vinegar and olive oil dressing! Need a change from spinach, try romaine leaves with sweet pepper, cucumber and crumbled feta cheese. Here are a couple that we enjoyed recently.

Niala in Krommenie made this one with spinach leaves, onions, olives, and chunks of gorgonzola cheese; salt, pepper and olive oil! The olives and stinky gorgonzola gave this a luxurious and distinctive flavour.

This simpler salad started with spinach; added sliced fennel bulb for a lovely crunch; and the earthiness of sliced raw mushrooms. Dressed with salt, pepper, garlic and dashes of balsamic vinegar and olive oil.
