Cucumber chow

A chow is usually something we reserve for "green" fruit - like mango, or five finger (carambola), or pommecythere. It features a lime sauce with strong herbs like chadon beni, hot pepper and garlic. (This is different from the Chinese "chow" in which vegetables are quickly stir-fried.) This cucumber salad has many features of the green fruit chow; and if there's any left over, keep it as an accompaniment to your office lunch next day.

Cucumbers, two medium-sized
Onion, one small, sliced thinly
Garlic, one clove crushed
Juice of a small lime
Hot pepper slivers
Olive oil, 2 tablespoons
Sugar, teaspoon
Salt, quarter teaspoon

Slice alternating strips lengthwise off the cucumber so there's a bit of skin still on. Slice across in very thin coins. Add garlic and onion. Squeeze the lime juice over. Just before serving, add sugar, salt, hot pepper and olive oil. Mix well.  You can let it sit for five minutes. Serve as salad to pelau or curry dishes. Refrigerated overnight, the cucumbers are soft and soak up all the seasonings. You'll wish you had more.

  1. mmmmmm!!! mouth watering!! This is the best way to eat cucumbers, I love it in the summer, so thirst quenching,....I also use it to make cucumber sandwiches with whole wheat bread.
