Mushrooms more than meat!

Mushrooms, according to the latest issue of Bon Appetit (October 2010), have a substance (conjugated linoleic acid or CLA) that blocks the production of a protein that has the potential to lead to breast cancer. (The article goes on to say that dairy products, beef and lamb are other sources of CLA - so what about the connection between dairy, specifically cow's milk, and breast cancer?) And how many mushrooms do you need to eat to benefit? Half a pound? Well, it just sounds like everything we eat is both curse and cure. As my mother used to say, everything in moderation. Some days a little meat, on other days, a few mushrooms. Toss them raw into salads!

Enjoy mushrooms cooked with green beans:

Green beans, choose slim young beans, half a pound
Mushrooms, about half pound, sliced not too thinly
Olive oil, two or three tablespoons
Garlic, three cloves crushed and chopped
Salt, quarter teaspoon or to taste
Black pepper, coarse ground (optional)

Clean beans and snap (or cut) off the ends. Put oil in a pot at medium. Add garlic and couple dashes of salt. As the garlic exudes its flavour, put in beans and stir to coat with oil. Saute, stirring, for 5 minutes. Add mushrooms and continue to toss until beans are cooked  - they should be cooked but not limp. Serve immediately with rice, or with meat dishes.

  1. yes, mushrooms are a good addition to vegetable dishes,....it's mushroom season here, so we get all sorts wild, cultivated,.....I buy alot of oyster mushrooms, tossed up with some garlic and olive oil, a nice side dish for pasta and lean cuts of meat.

  2. In Melbourne there was his restaurant that specialized in burgers but I always use to get the "where's the beef burger" the beef patty was replaced by a gigantic cooked portabello mushroom with onion fried and other veggies sprinkled with blue cheese on the top
