Passionfruit Rum Punch

 Now that you have some passionfruit compote, you can use it as a topping on cheesecake, yogurt, toast, overnight oats... anything that needs the sunshine of passionfruit!

Here's my recommendation for an evening cocktail.

Blend about eight to 12 ounces of compote ... the amount that fits into a normal sized glass jar. Add half a litre of water to make a liquid nectar. If you have no blender, then use a spoon to press the compote through a sieve; make sure it all goes through. Mix in half litre of water.

Add ice cubes to your glass. Up to half fill with good rum. Add your passionfruit nectar to near the top of the glass. You can vary the proportions of passionfruit and rum as you like.

Stir and sip. Aaahhhh, smooth out the edges of the day.
