Yogurt Pancakes

 Not so fluffy as Ricotta Pancakes, these Yogurt Pancakes are easy to whip up. They go well with eggs and bacon and a sweet sauce like Passionfruit Compote.



Flour, 1 cup

Yogurt (full cream), 2 cups

Eggs, 4

Brown sugar, teaspoon (optional)
Salt, tip of a teaspoon

Baking powder, 2 teaspoons

Oil to smear on frying pan or griddle

Mix all ingredients to a smooth thick batter.

Heat pan or griddle (medium). Smear with a little oil. Use half-cup measure to drop batter in circles.

Flip as bubbles appear. Remove to a plate. Continue to make pancakes with the rest of the batter.

Approximately 10 3-inch diameter pancakes.
