Easy to make bread from your favourite bananas, ripe or over-ripe. Use plantains, moko, silk figs or gros michel. Add walnuts and sprinkle chocolate chips on top. Banana bread is very forgiving: you can use more than three cups squashed bananas; you can bake at 350 to 400F. It's always scrunptious straight out of the oven.

Bananas, 3 cups squashed (2 plantain, 3 large bananas, 6-8 silk figs)
Eggs, 2
Brown sugar, half to three-quarter cup
Butter, half cup melted
Flour, 2 cups
Baking soda, heaping teaspoon
Salt, pinch
Chocolate chips, half cup
Heat oven to 350F or 180C. Line a square pan with foil.
In a blender, mash bananas, sugar and eggs. Add butter.
Add to the flour, baking soda and salt in a large bowl. Mix well with half the chocolate chips.
Pour into a prepared pan. Add remaining chips on top.
Bake for one hour or until a skewer comes out clean.
Best banana bread should be refrigerated after two days. |
