Here's a quick and easy chicken dish for a Monday night supper. Chicken breasts are convenient ways to fill your protein needs. Slice them as thin as you like. Use a frying pan. Serve with a smashing new potato salad.
Chicken breasts, sliced
Mushrooms, portabello caps, sliced
Olive oil
Ginger, sliced thinly
Garlic, smashed and sliced
Soy sauce
Salt and black pepper
Pour a generous amount of olive oil to cover bottom of pan. Add ginger and garlic, and saute at medium heat until fragrant. Lay chicken in a layer on ginger and garlic. Sprinkle salt and black pepper. After 4-5 minutes, turn breasts. Cook for another 5-7 minutes. Add mushrooms in the spaces. Toss around the pan. Cook until the mushrooms are turning colour but not soft. You can cover to finish cooking; or leave open for nice browning on the meat.
Serve with white rice, or potato salad.
