A meal of vegetables sauteed in generous olive oil, lightly flavoured with sesame oil, ginger, salt and black pepper, makes a hearty midday meal without filling you up.
Garlic and ginger for flavour; cabbage for heft, carrots and sweet peppers |
Carrots, 4-5 small, sliced
Cabbage, hefty piece, sliced
Brocoli, stems peeled, and florets
Sweet peppers, two, sliced
Mushrooms, 6-7, sliced
Ginger, thumb sized piece in strips
Garlic, 4-5 cloves crushed
Olive oil, generous enough to cover bottom of your pan
Sesame oil, splash
Salt and black pepper to taste
Heat olive oil and saute ginger and garlic with salt.
At high heat, add carrots and stir fry for a few minutes. Add cabbage and brocoli.
Then mushrooms. Sweet peppers last.
You will see how the vegetables are cooking. Do not over cook. Sprinkle black pepper and sesame oil.
Serve on a hot white rice; or noodles.
