These are the best Christmas cookies to serve with a large pot of tea as the sun goes down and the air gets chill. they are adapted from Dani's Cooking, Dried Fruit Cookies. It's a basic cookie dough recipe; your dried fruit combo, chocolate chips or chunks make these cookies stand out!
Butter, half cup (4 oz or 113 gm) melted
Brown sugar, 3/4 cup
Egg, one
Flour, one and 2/3 cup approximately
Dried fruit (chopped dates, prunes, apricots whatever is on hand), one cup approx or more
Vanilla extract, one teaspoon
Baking powder, half teaspoon
Walnuts (optional)
Chocolate chips (Cocobel chunky chips) optional
Oven temperature is 360F.
Mix butter and sugar, vanilla. Add egg and mix well.
Add flour and baking powder. Mix in dried fruit and nuts.
Refrigerate dough before dropping by tablespoons on ungreased cookie sheets. Top with chocolate chips: Cocobel's are more than chips!
Bake for 12 minutes.
